'Salisbury steaks' beef mince burgers with mash

Stateside, they’re called Salisbury steaks, but they’re more like chunky burgers – and they’re smothered in tasty gravy! Ours are made with beef mince and grated courgette, then drenched in a rich onion and mushroom gravy that’s made extra marvellous with dollops of Dijon and Marmite. Served the good ol’ US of A way with fluffy mash and green beans.

Before you start

  • 2 saucepans
  • 1 large non stick frying pan
  • 1 medium mixing bowl

Make your mash

  • Peel the potatoes and cut into 2cm cubes, then cook in boiling water for 15-18 mins. Drain, return to the pan and mash, then lightly season.
  • Finely chop the parsley and mix half into the mash.

Shape the Salisbury steaks

  • Meanwhile, coarsely grate the courgette, wrap it in kitchen roll and squeeze out the excess water.
  • In a bowl, mix the courgette into the mince. Lightly season then, using your hands, shape into 4 flat oval-shaped patties (8 patties for 4 portions).

Slice & simmer

  • Peel and thinly slice the onion, and thinly slice the mushrooms. Trim the green beans.
  • Cook the green beans in boiling water for 3-4 mins, then drain.

Itʼs fry time!

  • At the same time, spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat, then boil a kettle. Fry the beef patties for 3 mins on each side, remove from the pan and set aside.
  • Return the frying pan to the heat, spritz with cooking spray and fry the onion and mushrooms for 3 mins.
  • Crumble in half the stock cube, pour in 300ml boiled water (500ml for 4 portions), then stir in the Hendersonʼs Relish and Marmite.
  • Return the patties to the pan and simmer for 4-5 mins until theyʼre cooked through and the sauce has reduced by half. Stir in the mustard.

Add your final touches

  • Plate up the Salisbury steaks with the mash and green beans, then spoon over the sauce and sprinkle the remaining parsley on top.
