Zingy salmon and orzo traybake

Or-zo tasty, or-zo satisfying, or-zo easy… this ‘bung it all in’ traybake ticks all the boxes! Succulent salmon meets onions, tomatoes, cabbage and pasta in one simple dish, with broccoli and dill added later. It’s finished with a yogurt drizzle that complements the garlicky and lemony flavours like a dream. Tray-mendous!

Before you start

  • 1x baking dish

Get prepping!

  • Peel the onions and cut each into 8 wedges. Halve the tomatoes, then core, trim and thinly slice the cabbage.
  • On a separate board, cut the salmon into bite-size chunks.

Mix & bake

  • Dissolve half the stock cube in 500ml boiled water (800ml for 4 portions).
  • In a large baking dish, mix together the onions, tomatoes, cabbage, salmon, orzo, garlic & herb paste, the zest and juice of the lemon and the stock.
  • Cover with foil and bake for 20-22 mins (25-27 mins for 4 portions), until the pasta is almost cooked.

Gather your greens

  • Trim the broccoli, then finely chop the dill.
  • Stir the pasta well, then scatter the broccoli over the top and bake, uncovered, for 10-12 mins.

Bring it all together

  • Remove the dish from the oven, stir in the dill and leave to sit for 5 mins, letting the orzo soak up the liquid.
  • Stir again, drizzle over the yogurt and serve.
