Grilled salmon with dill & fennel slaw

A side of crisp fennel, dill & carrot slaw does wonders for this fresh and zesty fish supper. It comes together in minutes while the salmon sizzles under the grill, then tender new potatoes tossed in yogurt and spring onions add a touch of delicious creaminess. What a catch!

Before you start

  • 1 large saucepan
  • 1 large mixing bowl
  • 1 baking tray

Boil the spuds

  • Heat your grill to high.
  • Quarter the potatoes and cook in boiling water for 15-18 mins, then drain.

Ready for a grilling?

  • Meanwhile, put the salmon on a baking tray lined with foil, spritz with cooking spray and grill for 10-12 mins until cooked through and flaking.

Sort your slaw

  • At the same time, trim and thinly slice the fennel bulbs. Coarsely grate the carrots, then peel and thinly slice the onions.
  • Finely chop the dill.
  • In a large bowl, mix together the fennel, carrots, onions and dill. Squeeze in the lime juice and stir.

Plate up

  • Thinly slice the spring onions, then add them to the potatoes along with the yogurt, stirring to coat.
  • Lightly season the salmon with black pepper and serve it on top of the potatoes and slaw.
