Speedy savoury minced beef with herby potatoes

This cosy classic is the ultimate comfort food. Carrot, onion and beef mince are sizzled together, then simmered in a savoury sauce perked up with herbs, garlic and a magic dash of Hendersonʼs Relish. Pop in some peas and serve with spud slices to unlock next-level loveliness.

Before you start

  • 1x medium saucepan
  • 1x large non-stick frying pan

Get the spuds going

  • Halve the potatoes and slice into 1cm-thick half-moons, then cook in boiling water for 14-16 mins. Drain, then lightly season.

Prep & fry

  • Meanwhile, dice the carrots into 1cm cubes. Peel the onions and dice into large pieces.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the carrots, onions and mince for 5-7 mins, breaking the mince up with a wooden spoon, until well browned.

Boost the flavour

  • Boil a half-full kettle. Finely chop the thyme leaves and the chives.
  • Stir half the chopped herbs, all the garlic paste and Hendersonʼs Relish into the mince and cook for 1 min.
  • Crumble in the stock, pour in 250ml boiled water (400ml for 4 portions), stir well and simmer for 5-7 mins.
  • Add the peas and cook for 2 mins.

Plate up

  • Toss the potatoes with the remaining herbs.
  • Serve the savoury minced beef with the herby potatoes.
