Quickie chicken stew

You can’t beat a classic stew – especially if it’s ready in a jiffy! This super-simple one is packed with chicken, carrots, onions and peas. It gets its savoury depth thanks to a splash of Henderson’s Relish, a dollop of Marmite, easy-squeezy garlic paste and fresh thyme and chives. Dish up with boiled spuds and dig in.

Before you start

  • 1x large saucepan
  • 1x large non-stick frying pan

Get your spuds going

  • Cut the potatoes into 1cm-thick half-moons, then cook in boiling water for 14-16 mins. Drain and lightly season.

Sear the chicken & veg

  • Meanwhile, dice the carrots into 1cm cubes, then peel the onions and dice into large pieces.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the carrots, onions and chicken for 5-7 mins until well browned.

Add some oomph!

  • Finely chop the thyme leaves and the chives.
  • Stir half the herbs into the frying pan along with the garlic paste, Marmite and Hendersonʼs Relish. Cook for 1 min.
  • Crumble in the stock cube, pour in 300ml water (450ml for 4 portions) and simmer for 5-7 mins, until the chicken is cooked through.
  • Add the peas and cook for 2 mins.

Herb & serve

  • Toss the remaining herbs through the potatoes and serve with the chicken stew.
