Smoky burgers with chipotle ketchup & veg fries

This deconstructed dish has all the ingredients of a classic stack minus the bun, including smoky beef burger patties, sweet potato and carrot chips, naked onion rings, charred gem lettuce and a chunky-dory chilli, paprika and cinnamon-spiced ketchup. It’s a hearty plateful you’ll be happy to demolish.

Get the fries going

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Cut the sweet potatoes into thin fries, and cut the carrots into ½cm-thick batons. Put both on a large baking tray lined with baking paper and spritz with cooking spray. Roast for 20-25 mins.

Shape your burgers

  • Meanwhile, put the mince into a mixing bowl and add half the chipotle paste (to taste) and half the paprika blend. Lightly season to taste with salt and mix well.
  • Form 2 equal-size burgers (4 for 4 portions) that are 1cm thick.

It’s frying time!

  • Peel the onions and thinly slice into ½cm-thick rings.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Press the burgers flat in the pan, then tip in the onion rings. Cook for 10-12 mins, turning the burgers halfway, until cooked through.

Make the ketchup

  • At the same time, put a small saucepan over a medium-high heat and tip in the tomatoes, tomato purée, cinnamon, the remaining chipotle paste (to taste) and paprika blend, plus 50ml water (75ml for 4 portions).
  • Stir well and simmer for 10-12 mins until the tomatoes are soft, then mash to make a thick ketchup.

Finish & serve

  • Halve the lettuces.
  • Transfer the burgers, onion rings and fries to plates.
  • Keep the burger pan over a high heat and add the lettuce, cut-sides down, for 30-60 seconds until charred. Add a splash of water and cook for 20 seconds (skip charring the lettuce if you prefer).
  • Serve the smoky burgers, onion rings and fries with the lettuces and chipotle ketchup.
