Smoked tofu fajita fusion bowls

Tofu in a Mexican-style dish? Bowled move! Golden smoked tofu is sautéed with red pepper, onion, black beans and Mexican spices, then served up with gem lettuce leaves, roasted sweet potato and a quick tomato and coriander salsa. No wraps, no rules – just big flavours and happy tastebuds.

Before you start

  • 1x baking tray lined with baking paper
  • 1x large non-stick frying pan
  • 1x mixing bowl

Pop the sweet potatoes in the oven

  • Heat your oven to 240ºC/fan 220ºC/gas 9/air fryer 200ºC.
  • Cut the sweet potatoes into 2cm cubes. Put them on a baking tray lined with baking paper (or into the air-fryer basket), lightly season and spritz with cooking spray. Roast for 25-30 mins (air-fry for 18-20 mins).

Sizzle the tofu

  • Meanwhile, drain the tofu, pat dry with kitchen roll and cut into 2cm cubes.
  • Put a large non-stick frying pan over a medium-high heat. Tip in the tofu, spritz with cooking spray and lightly season to taste with salt. Cook for 5 mins, turning occasionally, until golden.

Spice things up!

  • At the same time, peel and thinly slice the onions, and deseed and thinly slice the peppers.
  • Add the onions and peppers to the pan, tip in the spice mix and cook for 8-10 mins.
  • Drain and rinse the beans, then add them to the pan along with 100ml water (200ml for 4 portions) and cook for 5-7 mins, until the sauce just coats the beans.

Mix your salsa

  • While everything cooks, finely chop the coriander, and roughly chop the tomatoes.
  • Combine the coriander and tomatoes in a small bowl, then squeeze in the lime juice (to taste).

Bring everything together

  • Trim the lettuces and carefully separate the leaves.
  • Arrange the lettuce leaves in a bowl, then add the tofu fajita mix, salsa and roasted sweet potatoes.
