Quick-fire sausage & pasta fiesta

This is a little bit spicy, a lot sausagey and reassuringly saucy. Just sizzle it all up in a pan, throw in your cooked pasta and finish with a sprinkle of spring onions. You get to kick back with a satisfying bowl of comfort food, while your taste buds get to party!

Before you start

  • 1 saucepan
  • 1 large non stick frying pan

Get the pasta going

  • Cook the pasta in boiling water for 8-9 mins, then drain.

Start chopping

  • Meanwhile, remove the skins from the sausages and break them into small pieces.
  • On a separate board, peel and finely dice the onions. Deseed the peppers and dice into 1cm squares, and thinly slice the spring onions.

Ace the base!

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the sausages, onions and peppers for 5 mins.
  • Stir in the spice mix, chilli flakes (to taste) and garlic paste and cook for 1 min.

Simmer the sauce

  • Add the passata, crumble in the stock, pour in 200ml water (300ml for 4 portions) and stir well. Simmer for 5 mins.
  • Mix in the pasta and cook for 1 min.

Finish & serve

  • Sprinkle the spring onions over the sausage and pasta fiesta.
