Speedy beef & cumin noodles with cucumber pickle

Beef, spice and all things nice – this quick and easy noodle bowl has it all! Beef mince stir-fries with onions and pak choi, while cucumber chunks speed-pickle in a coriander dressing. A dash of tamari, cumin, chilli, ginger and garlic join the super-savoury sauce, ready for quick-cook noodles to soak up the flavours.

Before you start

  • 1x non-stick frying pan
  • 1x mixing bowl
  • 1x saucepan

Peel, slice & chop

  • Peel and thinly slice the onions, then trim the pak choi and cut into bite-size pieces. Finely chop the coriander.

Create a stir!

  • Spritz a non-stick frying pan with cooking spray and put it over a medium heat. Fry three-quarters of the onions and the pak choi with the mince for 5-7 mins, until well browned.

Make your relish

  • Meanwhile, cut the cucumber into 2cm chunks.
  • In a bowl, combine the cucumber with the remaining onion, half the chopped coriander, half the tamari and half the vinegar. Set aside to marinate.

Spice things up

  • Add the remaining tamari and vinegar to the frying pan, then stir in the chilli flakes (to taste), cumin, garlic & ginger paste and oyster sauce.
  • Fry for 1 min, then pour in 150ml water (200ml for 4 portions) and simmer for 3-4 mins, until the mince is cooked through.

Bring everything together

  • At the same time, cook the noodles in boiling water for 3-4 mins. Drain, then rinse.
  • Stir the noodles and the remaining coriander into the frying pan, then scatter over the relish and serve.
