Ooh-mami chicken & miso noodles

Umami is Japan's word for 'delicious savoury taste', and this hearty noodle bowl doesn't disappoint! Chicken, onion, green beans, pepper and a little chilli are stir-fried, then lightly simmered in a broth perked up with miso, gochujang and tamari. Filling wholemeal noodles and coriander seal the deal.

Before you start

  • 1 large saucepan
  • 1 large non stick frying pan

Prep your veg

  • Peel and thinly slice the onions. Trim the green beans and cut into thirds. Deseed and thinly slice the peppers. Finely dice the chillies (deseed for less heat), and finely chop the coriander.

Boil the noodles

  • Cook the noodles in boiling water for 3-4 mins, then drain and rinse.

Create a stir!

  • Meanwhile, spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the onions, beans, peppers and chillies (to taste) for 5 mins.
  • Add the chicken and cook for 3 mins until browned all over.

Sort that sauce

  • Squeeze the gochujang, miso and tamari into the frying pan. Crumble in half the stock cube, pour in 250ml boiled water and stir well (use all the stock and 350ml water for 4 portions).
  • Simmer for 5 mins until the chicken is cooked through.

Scatter & serve

  • Stir the noodles and half the coriander into the frying pan and cook for 1 min.
  • Sprinkle over the remaining coriander and serve.
