Steak in oyster & chilli sauce with noodles

If you like your fakeaways spicy, step this way! Our bespoke chipotle paste and fresh chilli turn up the heat in this saucy steak and noodle fest, packed out with stir-fried carrots, green peppers and spring onions, and flavoured with tamari, ginger, garlic, oyster sauce and fresh coriander.

Rub & sauté the steaks

  • Trim any visible fat from the steaks, then rub with half the chipotle paste (to taste).
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Fry the steaks for 3-4 mins on each side for medium (or 5-6 mins for well done).
  • Leave to rest, then thinly slice against the grain.

Peel & chop

  • Meanwhile, on a separate board, halve the carrots lengthways and slice into ½cm-thick half-moons. Peel and thinly slice the onions, and deseed and thinly slice the peppers. Finely dice the chilli (deseed for less heat).

Spice things up!

  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the carrots, onions and peppers for 6-8 mins.
  • Add the ginger & garlic paste, remaining chipotle paste and fresh chilli (to taste) and cook for 2 mins.
  • Sprinkle in the tamari and oyster sauce and add 150ml water (250ml for 4 portions), then stir well.

Cook the noodles

  • At the same time, cook the noodles in boiling water for 3-4 mins. Drain, then rinse.

Finish & serve

  • Thinly slice the spring onions and finely chop the coriander, then stir half of each into the veg along with the noodles. Cook for 2 mins.
  • Serve the sliced steak on top of the noodles and sprinkle with the remaining spring onions and coriander.
