One-pan turkey, squash & black bean chilli bowl

There’s a lot going on in this one, and every mouthful’s a joy! Soft cubes of squash, richly spiced turkey mince and black beans settle into a deeply delicious chilli with zesty lime, fragrant coriander and cooling yogurt. Quite the team effort!

Prep & fry

  • Peel the squash and halve lengthways, then discard the seeds and cut into 1cm cubes. Peel the onions and cut each into 8 wedges.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the squash and onions for 6-8 mins until beginning to soften.

Simmer away!

  • Add the turkey mince and tomatoes to the pan and fry for 3-4 mins, breaking up the mince with a wooden spoon, until browned all over.
  • Stir in the garlic paste and the spice mix, then crumble in the stock cube. Pour in the passata, the beans with their water and 250ml water (300ml for 4 portions).
  • Simmer for 12-14 mins, until the squash is soft and the turkey is cooked through.

Sort your finishing touches

  • Meanwhile, finely chop the coriander and quarter the lime.

Bring it all together

  • Squeeze the juice from 2 lime quarters into the chilli, and stir in half the coriander.
  • Dish up the chilli, drizzle over the yogurt and scatter over the remaining coriander. Serve with the lime wedges.
