Chilli con steak & salsa

Meet our steak night x chilli collab! Take tender strips of bavette steak, sizzle alongside onions, peppers and garlic, and lightly simmer in a spiced tomato sauce. Add a zingy tomato and coriander salsa, a heap of fluffy white rice and a hearty appetite. What a combo!

Before you start

  • 1x non-stick saucepan
  • 1x saucepan
  • 1x small bowl

Prep & soften the veg

  • Peel and finely dice the onions, deseed the peppers and dice into 2cm squares, and peel and crush the garlic.
  • On a separate board, trim any visible fat from the steaks, then thinly slice against the grain.
  • Spritz a large non-stick frying pan with cooking spray and put it over a high heat. Cook the steak for 3-4 mins, turning occasionally, until browned all over, then transfer to a plate.

Simmer the chilli

  • Keep the pan over a medium-high heat. Tip in three-quarters of the onions, the peppers and the garlic and cook for 6-8 mins.
  • Add the spice mix and tomato purée and and cook for 3-4 mins, stirring.
  • Crumble in the stock, squeeze in the passata and pour in 200ml water (300ml for 4 portions), then stir well. Return the steak to the pan, lightly season and simmer for 8-10 mins until the sauce has slightly thickened.

Boil the rice

  • Meanwhile, cook the rice in boiling water for 10-12 mins, then drain.

Itʼs salsa time!

  • Zest the lime, roughly chop the coriander, and halve the tomatoes.
  • In a small bowl, combine the zest, coriander and tomatoes. Squeeze in the juice from half the lime (to taste) and tip in the remaining onion.

Finish & serve

  • Cut the unsqueezed lime half into wedges.
  • Spoon the chilli con steak and tomato salsa over the rice and add the lime wedges for squeezing.
