Nifty Thai beef noodles

Getting home hangry? We’ve a fast fix for that! Our quickie noodles are stirred through sizzled beef mince, pak choi and pepper in a tasty Thai red curry sauce. Fast and fabulous!

Boil the noodles

  • Cook the noodles in boiling water for 3-4 mins. Drain, then rinse.

Sizzle the mince

  • Meanwhile, spritz a large non-stick frying pan with cooking spray and put it over a high heat. Tip in the mince and lightly season.
  • Cook the mince for 4-6 mins, breaking it up with a wooden spoon, until browned all over.

Spice things up!

  • At the same time, trim the pak choi and cut into bite-size pieces. Deseed the peppers and dice into 1cm squares. Finely dice the chillies (deseed for less heat), and pick the coriander into small sprigs.
  • Add the pak choi, peppers and chillies (to taste) to the frying pan and cook for 1 min.
  • Squeeze in both pastes and stir.

Turn up the flavour

  • Boil a half-full kettle, and thinly slice the spring onions.
  • Sprinkle the spring onions, tamari and fish sauce into the frying pan, pour in 150ml boiled water (250ml for 4 portions) and stir well.
  • Tip in the noodles and warm through for 1 min.

Add your final flourish

  • To serve, top the beef noodles with the coriander.
