Tasty tofu chilli with onion salsa

Protein-packed tofu is crumbled into a rich chilli sauce with tomato and red pepper, and served with rice and an onion salsa spiked with lime and coriander. Best of all, it’s ready in half an hour. Muchas gracias, SWK chefs!

Soften the peppers & onions

  • Deseed and finely dice the pepper,s and peel and finely dice the onions. Peel and crush the garlic.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the peppers and three-quarters of the onions for 5-7 mins.
  • Add the garlic and cook for 2 mins.

Spice things up

  • Meanwhile, halve the tomatoes. Drain the tofu, pat dry with kitchen roll and crumble into fine crumbs that resemble mince.
  • Add the tofu to the pan along with the tomato purée and half the spice mix sachet (the whole sachet for 4 portions), then cook for 2 mins.
  • Tip in the passata, crumble in half the stock cube and pour in 200ml water (use all the stock and 300ml water for 4 portions). Stir well and simmer for 8-10 mins, adding the tomatoes for the final 5 mins, until thickened slightly.

Cook the rice

  • At the same time, cook the rice in boiling water for 10-12 mins, then drain.

It’s salsa time!

  • Finely chop the coriander and put it into a small bowl with the remaining diced onion.
  • Grate the zest of the limes into the bowl, then squeeze in the juice (to taste) and mix well.

Plate up

  • Serve the chilli on the rice, then spoon over the salsa.
