Fajita-style veg & sweet potato wedges

Our veggie version of this Mexican classic is packed with authentic fajita flavour – and with colourful veg! Red onion, pepper, and broccoli are sizzled in chilli, ginger and garlic, and served with golden sweet potato wedges, blackened corn, coriander-spiked yogurt and a squeeze of fresh lime.

Roast the sweet potatoes

  • Heat your oven to 220ºC/fan 200ºC/gas 7.
  • Cut the sweet potatoes into wedges, then put them on a baking tray lined with baking paper. Spritz with cooking spray, lightly season and roast for 20-25 mins until soft and golden.

Prep & fry your veg

  • Meanwhile, peel and thinly slice the onions. Deseed and thinly slice the peppers, and cut the broccoli into small florets.
  • Thinly slice the chilli (deseed for less heat), finely chop the coriander, and drain the sweetcorn.
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium-high heat. Fry the corn for 5-6 mins until itʼs a deep golden brown, then transfer to a bowl and set aside.
  • Wipe the pan, spritz with cooking spray, return it to the heat and fry the onions, peppers and broccoli for 5 mins.

Add some zing!

  • Add the chilli (to taste), ginger & garlic paste and Mexican spice mix to the veg and cook for 2 mins.
  • Crumble in half the stock cube and pour in 150ml water (use all the stock and 200ml water for 4 portions). Stir well and simmer until the sauce coats the veg.
  • Halve the lime and cut 1 half into wedges. Squeeze the juice from the other half into the pan (to taste) and add half the coriander. Stir the remaining coriander into the yogurt.

Plate up

  • Top the sweet potato wedges with the fajita-style veg, corn and yogurt. Serve with the lime wedges.
