Curried apple, fennel & carrot couscous salad

Who introduced apple to curry? We’d like to buy them dinner! Sweet, crunchy apple mingles with curry-roasted carrots and fennel, fluffy couscous, lettuce and coriander. Then comes a garlicky yogurt dressing to bring the whole happy gathering together. A salad, yes – but one that definitely has main-meal energy.

Before you start

  • 1x baking tray lined with baking paper
  • 1x small bowl
  • 1x large mixing bowl

Ready, set, prep!

  • Dice the carrots into 2cm chunks. Trim the fennel bulbs, then cut them lengthways into quarters.
  • Peel the onions and cut them in half. Slice 3 halves (or 2 whole onions for 4 portions) into wedges.
  • Put the veg on a baking tray lined with baking paper and spritz with cooking spray.

Roast the veg

  • In a small bowl, mix together the curry powder and cinnamon. Scatter one third over the veg and roast for 22-25 mins, until soft.
  • Mix the yogurt, garlic paste and vinegar into the remaining spice mix and set aside.

Slice, dice & chop

  • Meanwhile, thinly slice the remaining onion half (the whole onion for 4 portions). Trim the lettuces and thinly slice. Quarter and core the apples, then dice into ½cm cubes.
  • Finely chop the coriander.

Sort your couscous

  • Put the couscous in a large bowl and lightly season to taste with salt. Pour in enough boiled water to just cover the couscous, stir well, cover and leave for 5 mins, until the water is absorbed.

Bring it all together

  • Add the sliced onion, lettuce, apple and coriander to the couscous and stir it all together.
  • Top the couscous with the roasted veg, then drizzle over the dressing and serve.
