Turbocharged turkey keema curry

Is your evening schedule short on minutes? Twenty’s plenty with our quick and easy keema! Turkey mince is sizzled in spice with our easy squeezy ginger and garlic paste, then gently simmered with tomatoes, onions, chilli and peas. A pop of coriander, a pile of fragrant rice, and you’re done.

Before you start

  • 1x medium saucepan
  • 1x large saucepan

Set the rice simmering

  • Cook the rice in boiling water for 10-12 mins until cooked, then drain.
  • Stir the nigella seeds through the rice.

Time to fry!

  • Meanwhile, peel the onions and dice into 2cm cubes. Finely dice the chilli (deseed for less heat).
  • Spritz a large non-stick frying pan with cooking spray and put it over a medium heat. Fry the onions, chilli (to taste) and tomatoes for 4-5 mins.

Build your curry

  • Add the mince, curry powder and ginger & garlic paste to the pan and fry for 3-4 mins until browned.
  • Tip in the passata, crumble in half the stock cube and pour in 150ml water (use all the stock and 250ml water for 4 portions). Stir well and simmer for 5 mins, until the turkey is cooked through.

Plate up

  • At the same time, roughly chop half the coriander. Halve the lemon and cut 1 half into wedges.
  • Stir the peas into the curry, add the chopped coriander and squeeze in the juice from the lemon half (to taste).
  • Dish up the curry with the rice and lemon wedges, then scatter over the remaining coriander to serve.
